Ingredients
For the paratha:
2 cups all-purpose flour (maida)
½ tsp salt
1 tbsp oil
Water as needed
Oil/ghee for cooking
For the egg filling:
2 eggs per roll
1 small onion, thinly sliced
1 green chilli, finely chopped
1 tbsp coriander, chopped
Salt to taste
¼ tsp black pepper
¼ tsp red chilli powder
For serving:
Green chutney
Tomato ketchup
Chaat masala
Thinly sliced onion
Lemon juice
👩‍🍳 Method
Make the dough: Mix maida, salt and oil. Add water gradually and knead into a soft dough. Rest for 20 minutes.
Divide into balls and roll each into a thin paratha.
Heat a tawa, place the paratha and cook lightly on both sides.
Beat 2 eggs with salt, pepper, chilli and coriander.
Pour the egg mixture onto the tawa and immediately place the paratha over the egg.
Press gently and cook until the egg sticks to the paratha. Flip and cook for another minute.
Add sliced onion, green chutney, ketchup, chaat masala and a squeeze of lemon.
Roll tightly, wrap in butter paper or foil, and serve hot. 🌯🥚
Tip: For a street-style taste, add a little butter while cooking the paratha and a pinch of chaat masala over the egg.
