🧾 Ingredients
For Kofta
- 250 g paneer, grated
- 2 medium potatoes, boiled and mashed
- 2 tbsp cornflour
- 1 tbsp chopped coriander
- ½ tsp garam masala
- ½ tsp red chilli powder
- Salt to taste
- 8–10 cashews, chopped
- 1 tbsp raisins
- Oil for deep frying
For Gravy
- 2 tbsp butter
- 1 tbsp oil
- 1 large onion, chopped
- 2 medium tomatoes, chopped
- 10–12 cashews, soaked
- 1 tbsp ginger-garlic paste
- ½ tsp turmeric
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ½ tsp garam masala
- ½ tsp kasuri methi
- ½ cup fresh cream
- ½–1 cup water
- 1 tsp sugar
- Salt to taste
👩🍳 Method
1. Make the kofta
- Mix paneer, mashed potato, cornflour, coriander, garam masala, chilli powder and salt.
- Take a small portion and place a little chopped cashew and raisin in the centre.
- Roll into smooth balls.
- Heat oil over medium heat and fry the koftas until golden and crisp.
- Drain and keep aside.
2. Prepare the gravy
- Heat oil and butter.
- Add onion and sauté until lightly golden.
- Add ginger-garlic paste and cook for 1 minute.
- Add tomatoes and cashews.
- Cook until tomatoes become soft.
- Cool slightly and blend into a smooth paste.
- Return the paste to the pan.
- Add turmeric, chilli powder, coriander powder, cumin powder and salt.
- Cook until the butter/oil starts separating.
- Add water and simmer for 5–7 minutes.
- Add sugar, garam masala and kasuri methi.
- Lower the heat and add cream. Mix gently.
3. Assemble
- Place the koftas in the serving bowl.
- Pour the hot creamy gravy over them just before serving so the koftas remain soft outside and don't become soggy.
- Garnish with cream, coriander and a few cashews.
⭐ Restaurant-Style Tips
- Make sure the kofta mixture isn't too soft; add a little extra cornflour if needed.
- Fry one kofta first to test it before frying the whole batch.
- Keep the gravy smooth and creamy.
- Add koftas only at serving time.
