🧾 Ingredients

For Paneer Bhurji

  • 250 g paneer, crumbled
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • ½ capsicum, finely chopped
  • 1 green chilli, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tbsp oil or butter
  • ½ tsp cumin seeds
  • ½ tsp turmeric
  • 1 tsp red chilli powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp kasuri methi
  • Salt to taste
  • Fresh coriander

For the Roll

  • 4 chapatis or parathas
  • 1 onion, thinly sliced
  • 1 capsicum, thinly sliced
  • Green chutney
  • Tomato ketchup
  • Mayonnaise
  • Chaat masala
  • Lemon juice
  • Butter or oil

👩‍🍳 Method

1. Make the paneer bhurji

  1. Heat oil/butter in a pan.
  2. Add cumin seeds and let them splutter.
  3. Add onion and sauté until translucent.
  4. Add ginger-garlic paste and green chilli; cook for 1 minute.
  5. Add tomato and capsicum. Cook for 3–4 minutes.
  6. Add turmeric, chilli powder, coriander powder and salt.
  7. Add crumbled paneer and mix gently.
  8. Cook for 2–3 minutes.
  9. Add garam masala and kasuri methi. Finish with coriander and a little lemon juice.

2. Prepare the roll

  1. Heat a chapati/paratha on a tawa with a little butter.
  2. Spread green chutney + mayonnaise + ketchup over it.
  3. Place a generous amount of paneer bhurji in the centre.
  4. Add sliced onion and capsicum.
  5. Sprinkle chaat masala and squeeze a little lemon juice.
  6. Fold the sides and roll tightly.
  7. Toast the roll for 1–2 minutes until lightly crispy.

⭐ Street-Style Tip

For a delicious paneer kathi roll, put the paratha on the tawa, pour 1 beaten egg over it, place the paratha on top, and cook before adding the paneer bhurji. It makes the roll extra rich and tasty. 😋

Serve hot with green chutney and onion rings.
